<p>Cand aerul devine mai racoros, iar frunzele ruginii fosnesc la fiecare pas, parca simti nevoia de ceva dulce, cald si parfumat. Ce zici de o <strong>tarta cu pere</strong>, cu un twist surprinzator: <strong>aroma subtila de ceai negru</strong>? Este un desert rapid, perfect pentru o dupa-amiaza de toamna petrecuta acasa, cu o cana de ceai sau cafea alaturi.</p>



<p>Combinatia dintre <strong>pere dulci, zemoase si ceai negru</strong> surprinde prin subtilitate: aroma ceaiului nu domina, ci se simte mai ales in <em>aftertaste</em>, adaugand un twist elegant. <h2 class="wp-block-heading">Tips &amp; tricks pentru o tarta cu pere reusita</h2>



<p><strong>Alege perele potrivite</strong> &#8211; cele mai bune sunt perele ferme, dar suculente, cum sunt <strong>Conference </strong>sau<strong> Abate Fetel</strong>. Daca folosesti pere foarte coapte, risti sa lase prea mult lichid.</p>



<p><strong>Pregateste perele corect</strong> &#8211; caleste-le cateva minute in unt inainte de a le pune in tarta. Astfel, isi pastreaza textura si nu inmoaie aluatul.</p>



<p><strong>Blind baking</strong> &#8211; coace partial aluatul inainte de a adauga umplutura. In felul acesta eviti o baza umeda si te bucuri de o crusta frageda si crocanta.</p>



<p><strong>Ceaiul conteaza</strong> &#8211; alege un ceai negru de calitate, cu aroma puternica (<strong>Earl Grey, Assam, Ceylon</strong>). Chiar daca gustul final e subtil, diferenta se simte in complexitatea desertului.</p>



<p><strong>Lasa tarta sa se raceasca</strong> &#8211; stiu ca e greu sa rezisti, dar daca tai tarta imediat, umplutura va curge. O ora de asteptare e suficienta ca sa se aseze frumos.</p>



<p><strong>Modelul de deasupra</strong> &#8211; se face foarte simplu! Am filmat un video pas cu pas pentru a intelege mai bine. </p>

<p>Dar daca nu vrei sa te complici, poti apela la o varianta mai rapida: <strong>un crumble delicios</strong>. Ai nevoie de:</p>

<li>60 g zahar brun (sau alb, dar brunul da o nota caramel)</li>



<li>60 g unt rece, taiat cubulete</li>



<li>20 g fulgi de ovaz (optional, pentru textura; daca nu, poti inlocui cu faina)</li>



<li>0.25 lingurita scortisoara (optional, dar completeaza perfect perele)</li>



<li>un praf de sare</li>
</ul>



<p>Punem toate ingredientele intr-un bol. Framantam cu varfurile degetelor pana obtinem o textura sfaramicioasa, ca niste firimituri. Presaram crumble-ul peste umplutura cu pere inainte de copt.</p>

<h2 class="wp-block-heading">Cum pastram tarta cu pere</h2>



<p>Tarta se pastreaza foarte bine <strong>la frigider</strong>, <strong>timp de 3–4 zile</strong>, acoperita cu <strong>folie alimentara</strong>. Inainte de servire, poti incalzi feliile cateva minute in cuptor sau la cuptorul cu microunde, la temperatura mica, ca sa redevina fragede si parfumate. O alta varianta delicioasa este sa o servesti la temperatura camerei, cu o lingura de frisca sau o cupa de inghetata de vanilie.</p>

<p><strong>Pot congela tarta cu pere?</strong><br>Da, poti congela atat aluatul crud, cat si tarta coapta. In cazul tartei coapte, lasa-o sa se raceasca complet, apoi congeleaz-o invelita bine in folie alimentara. Se pastreaza pana la 2 luni.</p>

<p>E toamna, ceea ce inseamna ca e timpul pentru &#8222;<strong>Pumpkin Spice Everything</strong>&#8222;! De la cafea si chai latte pana la clasica placinta cu dovleac sau alte prajituri de toamna, amestecul de condimente Pumpkin Spice nu trebuie sa iti lipseasca din camara. Este mai mult decat usor sa il faci chiar tu, din ingrediente pe care probabil le ai deja in dulap. Si, bineinteles, vezi iesi mult mai ieftin decat varianta sa gata cumparata. Asta daca il gasesti prin magazine, pentru ca la noi, spre deosebire de America, nu e atat de popular (din pacate). </p>

<p>Pentru a face amestecul Pumpkin Pie Spice ai nevoie doar de <strong>5 ingrediente si 5 minute</strong>.&nbsp;Pur si simplu adauga condimentele macinate intr-un castronel, amesteca-le putin, cat se combine si apoi transfera-le intr-un borcanel. <p>Majoritatea condimentelor din amestecul de astazi  sunt originare dintr-un grup de insule din Asia de Sud-Est, care acum fac parte din Indonezia.&nbsp;Cunoscute sub numele de <strong>Insulele Mirodeniilor</strong>, locatia lor era un secret bine pazit.&nbsp;Odata ce olandezii au preluat controlul asupra acestor insule, la inceputul secolului al XVII-lea, ei au inceput sa creeze amestecuri de condimente precum <strong>speculaaskruiden</strong>.  Acesta este asemanator cu condimentul Pumpkin Spice, dar contine si cardamom si, uneori, piper alb. </p>

<p>Pana in 1791, un amestec similar numit „mirodenii amestecate” a aparut in&nbsp;cartea <strong>The Practice of Cookery</strong>, scrisa de un autor scotian cunoscut doar sub numele de „Mrs. Frazer”.&nbsp;Amestecul includea nucsoara, cuisoare si „piper de Jamaica”, care este probabil ienibahar – originar din Caraibe, unde britanicii aveau propriile lor colonii.&nbsp;</p>



<p>Incet, incet, amestecul de mirodenii si-a făcut drum in Lumea Noua, asa cum demonstreaza&nbsp;prima carte de bucate cunoscuta&nbsp;scrisa de un american, <strong>American Cookery</strong>, de Amelia Simmons, publicata in 1796.&nbsp;Aceasta include o reteta de placinta cu dovleac cu un amestec de ienibahar, nucsoara si ghimbir. Placinta cu dovleac a devenit extrem de populara de-a lungul timpului si, in cele din urma, a devenit un element de baza al sarbatorii de Ziua Recunostintei.</p>



<p>Cateva secole mai tarziu, in anii 1930, companiile producatoare de condimente precum <strong>Thompson &amp; Taylor Spice Co</strong> si <strong>McCormick &amp; Company</strong> au lansat un produs revolutionar: Pumpkin Pie Spice, un amestec de condimente gata facut gandit pentru a aroma placinta cu dovleac. Patiserii puteau cumpara un singur condiment in loc de mai multe.</p>



<p>Ei, si din acest punct pana in zilele noastre, condimentele PS au devenit tot mai populare, fiind reprezentative pentru bunatatile de toamna&#8230; si nu numai!<strong> Pumpkin Spice Everything</strong>: sunt disponibile o multime de produse cu aceasta aroma, de la inghetata, gogosi, iaurt, cereale si alte dulciuri pana la lumanari parfumate si geluri de dus. </p>



<h2 class="wp-block-heading">Ce poti face cu amestecul de condimente Pumpkin Spice?</h2>



<p>Sincer, ar fi mai simplu sa iti spun ce nu poti face. Acest amestec este perfect pentru a condimenta <strong>bauturile </strong>tale preferate sau <strong>deserturile </strong>de toamna. De asemenea, il poti folosi si in mancare, nu doar in dulciuri, <strong>pentru a asezona legumele la cuptor, pilaful sau friptura</strong>. </p>



<p>Eu la mancare nu prea ma pricep, dar m-am gandit sa iti dau cateva idei in care poti folosi acest amestec aromat de condimente in bauturi sau prajituri. Si da, se afla si atat pe populara cafea <strong>Pumpkin Spice Latte</strong> pe lista! Asadar, amestecul aromat de condimente este perfect pentru:</p>

<p>Acest amestec de condimente este minunat pentru a da aroma cafelei de dimineata, pentru a condimenta ceaiul negru sau pentru a face faimoasa bautura <strong>Pumpkin Spice Latte</strong>. Bineinteles, poti condimenta si ciocolata calda care iti indulceste zilele reci, dar si ceaiul rooibos sau de fructe. </p>

Fie ca preferi varianta de terci cald sau de terci fara fierbe, la rece (facut peste noapte), adauga o lingurita de Pumpkin Spice, eventual putin piure de dovleac. <p><strong>Varianta la rece:</strong> adaugam toate ingredientele intr-un castron sau borcan, amestecam si dam la frigider peste noapte. </p>



<p><strong>Varianta calda, cu fierbere:</strong> Adaugam fulgii de ovaz si piureul de dovleac intr-o cratita. Turnam laptele si amestecam, apoi presaram condimententele si lasam pe foc mediu, amestecand constand, pana incepe sa se ingroase. Adaugam siropul de artar si luam de pe foc. Transferam intr-un castron si adaugam topping-ul dorit. </p>

<p>Mmmm, cat de pline de aroma vor fi briosele tale preferate daca adaugi si Pumpkin Spice! Se potriveste atat pentru cele mai simple, cu vanilie, cat si pentru briosele cu ciocolata. Cat despre chec, daca ai in plan unul cu mere, dovleac sau <a href="https://madelicii.ro/reteta/chec-cu-ceai-negru/" target="_blank" rel="noreferrer noopener">ceai negru</a>, amestecul de condimente PS e asul din maneca pentru un iz extra-tomnatic! </p>

<p>Imi place mult sa pregatesc tot felul de biscuiti sau fursecuri, mai ales in sezonul rece. Miroase asa de frumos in casa! Iar savurate impreuna cu o cana de ceai, intr-o zi ploioasa de toamna, parca iti ung sufletul. Sunt atat de multe variante de fursecuri pe care le poti aromatiza cu aceste condimente! Iti recomand, de exemplu,<strong> fursecurile cu ceai negru si glazura de artar</strong>, sunt pur si simplu delicioase! Inlocuieste condimentele din reteta prezentata cu 1 lingurita de Pumpkin Spice. </p>

<p>Sa presupunem ca esti invitat(a) intr-o vizita spontana. N-ai timp sa mergi sa cumperi ceva, nici nu prea ai idei. Ei bine, pregateste repede un amestec Pumpkin Spice, alege un borcanas dragut, leaga-i o fundita, eventual lipseste si o eticheta si gata, poti sta fara grija. Nu te prezinti cu mana goala si oferi si un cadouas simpatic, practic si aromat. </p>



<h2 class="wp-block-heading">Cum se pastreaza condimentul Pumpkin Spice?</h2>



<p>Pastreaza acest amestec de condimente la fel ca pe oricare altul: intr-un recipient mic, inchis ermetic, intr-un loc racoros si ferit de razele soarelui. Depozitat corespunzator, te poti bucura de el mult si bine (pana la trei ani). </p>

<p>Nu cred ca e ceva mai placut in zilele reci de toamna decat sa te cuibaresti sub o paturica pufoasa, acompaniat(a) de o cana de ceai si ceva dulce si bunut. Acesti biscuiti cu ceai negru, parfumati de <strong>aroma condimentelor calde</strong>, de sezon si acoperiti cu o glazura cu <strong>sirop de artar</strong> iti vor bucura sufletul si papilele gustative. Te vor cuceri atat cu textura lor frageda, dar si cu aromele deosebite, care se impletesc atat de bine! </p>

<h2 class="wp-block-heading">Iti place ceaiul negru? Atunci sigur iti vor placea si aceste fursecuri! </h2>



<p>Inspiratia biscuitilor a venit de la celebra bautura <strong>chai</strong>, un amestec de ceai si condimente precum scortisoara, cardamom, cuisoare, ghimbir si boabe de piper negru. Aceasta bautura este adesea servita cu lapte si indulcita cu miere, zahar sau chiar sirop de artar. </p>



<p>Legenda spune ca originea chai-ului dateaza de mai bine de 5.000 de ani, cand un rege din ceea ce este acum India a ordonat sa fie creata o bautura condimentata vindecatoare pentru utilizare in Ayurveda, o practica medicinala traditionala in care ierburile si mirodeniile sunt folosite pentru vindecare.&nbsp;</p>



<p>Versiunile originale ale „masala chai” sau „ceai condimentat” nu contineau frunze de ceai de&nbsp;<em>Camellia sinensis</em>&nbsp;.&nbsp;Adaugarea de frunze de ceai negru, lapte si zahar a fost popularizata abia pe la mijlocul anilor 1800, cand a fost descoperit soiul de planta de ceai <em>Camellia sinensis assamica</em> in India. Acesta a fost apoi cultivat de britanici, care conduceau continentul la acea vreme si aveau obiceiul de a bea ceai negru cu lapte si zahar. <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/2615.png" alt="☕" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<h2 class="wp-block-heading">Joaca-te cu aromele si formele</h2>



<p>Practic, reteta de biscuiti cu ceai negru este una de baza in ceea ce priveste aluatul, cu unt, faina si zahar. Cand vine vorba de arome, le poti adapta dupa bunul plac. Bineinteles, te sfatuiesc sa nu renunti la ceaiul negru, pentru ca asta le face speciale, insa te poti juca cum vrei cu <strong>mirodeniile</strong>. Modifica cantitatile in functie de preferintele tale, ba chiar poti adauga si alte condimente &#8211; <strong>piperul negru</strong> sau <strong>anasonul </strong>sunt si ele o idee foarte buna. </p>



<p>Sunt atat de bune fursecurile astea incat le poti pregati si fara glazura. Dar, in mod sigur, aceasta le va duce la un cu totul alt nivel. </p>



<p>Trebuie sa stii ca, folosind cantitatea de <strong>zahar</strong> din reteta, fursecurile nu vor iesi foarte dulci. Asta pentru ca glazura va iesi foarte dulce, echilibrand astfel gustul fursecurilor. Insa, daca optezi pentru varianta neglazurata, iti recomand sa pui totusi o cantitate un pic mai mare de indulcitor. </p>



<p>In ceea ce priveste formele biscuitilor, pe mine aceasta combinatie de ceai negru si condimente ma duce cu gandul la toamna. Asa ca am folosit niste <a href="https://cakemasters.ro/categorii/7355-set-3-decupatoare-metal-frunze-de-toamna-si-ghinda-6955783478031.html" target="_blank" rel="noreferrer noopener">decupatoare de metal</a> in forma de frunza, ghinda si dovlecel. Mi se par foarte utile de avut prin casa pentru ca le poti folosi si pentru a face decorul <a href="https://madelicii.ro/reteta/placinta-cu-mere-si-nuci/" target="_blank" rel="noreferrer noopener">placintelor de toamna</a>. Dar, bineinteles, tu poti folosi orice forme ai la indemana, chiar si cele cu tematica de Craciun, inimioare, stelute, floricele&#8230; </p>



<h2 class="wp-block-heading">Cum pastram biscuitii cu ceai negru?</h2>



<p>Ca si alte tipuri de fursecuri, si acesti biscuiti sunt foarte rezistenti. Pastreaza-i intr-un recipient inchis ermetic, la temperatura camerei pana la <strong>2 saptamani</strong>. </p>

<p>Acest chec cu ceai negru este exact ce ai nevoie pentru a-ti incepe diminetile reci de toamna sau de iarna. Aroma data de ceai este unica si pusa in valoare de combinatia de condimente (scortisoara, cardamom, anason si altele) si de siropul de artar. Si pentru ca, asa cum probabil stii, ceaiul negru se bea adesea cu lapte, m-am gandit ca ar merge de minune sa glazuram checul cu o delicioasa crema cu lapte condensat. Este combinatia perfecta de dulce si condimentat! </p>

<h2 class="wp-block-heading">Despre chai latte, bautura aromata cu ceai negru</h2>



<p>Inspiratia acestui chec a pornit de la bautura <strong>chai latte</strong>, pe care eu o ador si care astazi este extrem de populara in toate cafenelele. Aceasta preia aromele asociate cu <strong>masala chai</strong>, una dintre cele mai vechi bauturi pe baza de ceai din lume. A aparut in India cu mii de ani in urma si are la baza un amestec de ceai negru, condimente si lapte. Variantele moderne de chai latte utilizeaza spuma de lapte si sirop de artar pe post de indulcitor. In ceea ce priveste condimentele, cele mai frecvente sunt scortisoara, cardamomul, cuisoarele, anasonul, piperul si ghimbirul. </p>



<h2 class="wp-block-heading">Chec de post&#8230; sau nu</h2>



<p>Trebuie sa stii ca la baza, <strong>reteta este de chec de post</strong>, fiind perfecta si pentru cei vegani. Nu contine oua, si mai mult, in loc de lapte integral, iti recomand sa folosesti lapte vegetal (de preferabil de migdale, dar orice fel este bun) pentru ca ii va da un plus de aroma. Glazura cu lapte condensat si crema de branza este, pe de alta parte, cat se poate de ne-vegana, dar ataaat de buna! Daca nu doresti neaparat un desert vegan, atunci e musai sa o incerci! </p>



<h4 class="wp-block-heading">Daca vrei totusi un chec de post glazurat, poti incerca urmatoarea reteta de glazura:</h4>



<ul class="wp-block-list"><li>120 g zahar pudra</li><li>jumatate de lingurita de extract / esenta de vanilie</li><li>un sfert de lingurita de extract / esenta de migdale</li><li>2 linguri de lapte vegetal </li></ul>



<p>Amesteca toate ingredientele pana se omogenizeaza si obtii o glazura cat mai fina.  </p>



<p>Modul meu preferat de a savura acest chec cu ceai negru este, evident, cu o cana de ceai cu lapte alaturi.&nbsp;O felie groasa de chec glazurat, o cana fierbinte de ceai, o patura moale si calduroasa, cartea preferata sau serialul preferat de pe Netflix &#8211; asta numesc eu o seara perfecta! Ce-i drept, checul e asa de bun, ca e greu sa te rezumi doar la o singura felie&#8230; </p>

<h2 class="wp-block-heading">Cum pastram checul? </h2>



<p>Daca mergi pe varianta de glazura cu lapte condensat, atunci trebuie neaparat sa pastrezi checul la frigider, intr-un recipient inchis. Daca ai facut doar checul sau ai folosit cealalta glazura (vegana), poti pastra checul la temperatura camerei, dar tot intr-un recipient inchis sau infasurat in folie alimentara. Consuma-l in maximum 4-5 zile. </p>
