Indiferent cate deserturi mai pregatesti, nimic nu se compara cu <strong>mirosul de cozonac proaspat scos din cuptor</strong>, cu aluat pufos, rumenit perfect, si umplutura bogata. Acest <strong>cozonac cu ciocolata, alune de padure si coaja de portocala confiata</strong> este genul de desert care aduna toata familia in jurul mesei si transforma o zi obisnuita intr-un moment de sarbatoare.</p>

<p class="wp-block-paragraph">Ciocolata si alunele de padure sunt o combinatie clasica, iubita de toata lumea. Mai ales daca iti plac bomboanele Ferrero Rocher, cu atat mai mult vei aprecia acest cozonac. Poti alege <strong>ciocolata neagra</strong>, pentru un gust intens si usor amarui, sau <strong>ciocolata cu lapte</strong>, daca iti place un cozonac mai dulce si mai bland. Nu uita insa sa adaptezi cantitatea de zahar din umplutura in functie de tipul de ciocolata ales. </p>



<p class="wp-block-paragraph">Desi <strong>cozonacul traditional este, de cele mai multe ori, umplut cu nuca</strong>, recunosc ca mie imi place mai mult aceasta varianta cu <strong>alune de padure</strong>. Are un aer mai modern si ofera un <strong>twist interesant</strong> unui desert clasic, fara sa-i ia din farmec. Iar <strong>coaja de portocala confiata</strong>, chiar daca este optionala, ofera acel <strong>accent festiv</strong> care face diferenta. Desigur, poti adapta umplutura dupa gustul tau: poti folosi alte nuci sau alune, precum nuci clasice, migdale sau fistic, pastrand aceeasi idee de cozonac bogat si aromat.</p>

Pentru mine, cozonacul nu este doar un desert, ci o traditie, o emotie si o amintire care se repeta in fiecare an.</p>



<p class="wp-block-paragraph">Un <strong>cozonac de casa</strong>, cu umplutura generoasa de ciocolata si alune de padure, este exact genul de preparat care transforma o masa festiva intr-una memorabila.</p>

<h2 class="wp-block-heading">Cum pastram cozonacul cu ciocolata si alune de padure?</h2>



<p class="wp-block-paragraph">Este recomandat sa consumi cozonacul in decursul a <strong>4 zile</strong> si sa il depozitezi intr-un <strong>recipient etans, la temperatura camerei</strong>, sau acoperit cu folie alimentara. Acest lucru va preveni uscarea.</p>



<p class="wp-block-paragraph">De asemenea, cozonacul poate fi congelat, fiind ideal sa il infasori in folie alimentara si apoi intr-un recipient cu zip sau in folie de aluminiu. Poate fi pastrat in congelator timp de <strong>2-3 luni</strong> si se dezgheata la temperatura camerei cateva ore inainte de servire. In cazul in care doresti sa il servesti cald, se poate pune in cuptor la o temperatura de 90°C timp de 10 minute.</p>

<p class="wp-block-paragraph">Nu e nimic mai frumos decat sa aduci aromele padurii direct in bucatarie! Aceste <strong>briose in forma de ghinda</strong> iti ofera exact asta: un aluat moale si aromat cu <strong>piure de castane</strong>, un <strong>miez cremos de Nutella</strong> si un<strong> topping crocant de ciocolata si alune de padure</strong>. Fiecare muscatura e un contrast de texturi: moale, cremos si usor crocant, care te face sa vrei sa mai iei una imediat. Sa mai zic si cat de dragut arata?</p>



<p class="wp-block-paragraph">Aceste mici delicii sunt perfecte ca <strong>desert de toamna</strong>, cand aroma de castane ne incalzeste sufletul, dar, de ce nu, se potrivesc si pentru <strong>masa festiva de Craciun</strong>. Recunosc, e prima data cand il folosesc si sunt fascinata de aroma lui fina, dulce, usor caramelizata. Eu am folosit piure de castane de la Lidl (il gasesti la raionul de congelate) care contine deja zahar si esenta de rom, deci reteta trebuie adaptata daca folosesti de alt fel. Am vazut ca mai exista si de la alte branduri, cum ar fi Raureni sau Massa. Totodata, pe langa aroma delicata, piureul ofera <strong>umiditate blaturilor</strong>, pastrand textura pufoasa si fina.</p>



<p class="wp-block-paragraph">Blatul moale si aromat se imbina minunat cu <strong>miezul cremos de Nutella</strong>, iar <strong>glazura de ciocolata cu alune de padure</strong> fac fiecare muscatura un mic rasfat crocant. Aceasta combinatie transforma <strong>prajiturile in forma de ghinde</strong> intr-un desert de sezon cu care sigur vei impresiona familia si prietenii.</p>

<p class="wp-block-paragraph">Desi reteta clasica este cu Nutella si glazura de ciocolata cu alune de padure, poti sa te joci cu toppingurile si umpluturile dupa gust si inspiratie. De exemplu, in loc de Nutella, poti folosi <strong>unt de arahide</strong>, <strong>pasta de fistic</strong> sau un sos de <strong>caramel</strong>. Bineinteles, glazura de ciocolata neagra sau cu lapte poate fi inlocuita si de ciocolata alba sau de una mai clasica, din zahar pudra si zeama de lamaie sau lapte. </p>



<p class="wp-block-paragraph">Deasupra, in loc de alune de padure, poti presara <strong>fulgi de migdale</strong>, <strong>nuci pecan tocate</strong>, <strong>bucatele de ciocolata</strong> sau chiar <strong>scortisoara pudra</strong> pentru un accent aromatic de toamna. <p class="wp-block-paragraph">Daca ai pofta de ceva dulce, cremos si pliiiin de ciocolata, dar nu ai timp sau chef sa framanti aluat, atunci acest <strong>cheesecake cu ciocolata fara aluat</strong> e exact ce iti trebuie. Este o combinatie perfecta intre o <strong>pasca moderna</strong> si un <strong>cheesecake decadent</strong>, cu o textura fina si catifelata si un gust intens de ciocolata. Fara aluat dospit, fara aluat fraged – doar o crema aerata din crema de branza si ciocolata, coapta lent, cu grija, pentru a pastra toata delicatetea ei.</p>

<h2 class="wp-block-heading">Cheesecake cu ciocolata, pasca cu ciocolata, pasca cu crema de branza&#8230; multe denumiri, acelasi desert delicios! </h2>



<p class="wp-block-paragraph">Poti sa-i spui cum vrei: <em>cheesecake fara aluat</em>, <em>pasca fara aluat</em> sau chiar <em>pasca cu ciocolata</em>. Important e ca odata ce incerci reteta, ai in fata o prajitura absolut delicioasa, perfecta pentru masa de Paste sau orice alta ocazie speciala. De exemplu, daca esti in cautare de o pasca cu crema de branza mai usoara, mai cremoasa si mai simplu de facut decat varianta clasica cu branza de vaci si aluat dospit, ai gasit reteta ideala.</p>



<p class="wp-block-paragraph">Secretul acestei retete sta in <strong>crema de branza</strong>, care inlocuieste cu succes branza traditionala de vaci. Rezultatul? O crema densa si matasoasa, care se topeste in gura. In compozitie am adaugat, desigur, si <strong>ciocolata</strong>, pentru un gust profund si echilibrat.</p>



<p class="wp-block-paragraph">Iar tu, iubitorule de ciocolata, trebuie sa stii in acest cheesecake, ciocolata e din abudenta si se regaseste nu doar in crema cu branza, ci si in stratul de deasupra. Avem asadar un <strong>ganache fin cu alune de padure</strong>, care aduce un contrast crocant si un joc de texturi absolut delicios. Ganache-ul adauga un plus de eleganta si gust, dar, daca preferi o varianta mai simpla, poti servi cheesecake-ul si fara el. Este la fel de savuros. </p>

<p class="wp-block-paragraph">Cu zilele tot mai scurte si serile tot mai intunecate, se apropie cu pasi repezi una dintre cele mai fermecatoare si misterioase sarbatori ale anului: Halloween. Si ce mod mai bun de a sarbatori aceasta noapte a vrajitoarelor decat cu o delicioasa reteta care imbina farmecul mistic cu savoarea decadenta? Te invit sa incerci aceste <strong>placintele fragede</strong>, inspaimantator de gustoase si dragalase,<strong> umplute cu o delicioasa crema de ciocolata si alune de padure</strong>. </p>



<p class="wp-block-paragraph">Si cum niciun Halloween nu poate fi lipsit de personaje de speriat, ce face aceasta reteta cu adevarat speciala sunt formele adorabile in care vom modela placintele. <strong>Dovleceii, mumiile si fantomele haioase</strong>, cu zambete strengaresti si priviri misterioase, vor adauga un strop de magie pe masa de Halloween. Cu ajutorul unui sablon simplu, poti sa tai aluatul fraged in formele pe care le doresti. </p>

<h2 class="wp-block-heading">Crema de ciocolata si alune de padure pentru placintele infioratoare</h2>



<p class="wp-block-paragraph">Asociez mereu ciocolata cu sarbatoarea de Halloween. O fi de vina obiceiul americanilor de a merge la colindat, copiii fiind rasplatiti cu bomboane de ciocolata, o fi culoarea intunecata a ciocolatei de vina&#8230; nu stiu sigur, dar mi se pare ca dulciurile de Halloween trebuie sa aiba neaparat putina ciocolata. </p>



<p class="wp-block-paragraph">Pentru placintele stiam ca va trebui sa folosesc o umplutura inchisa la culoare, pentru a contrasta cat mai bine formele. La propunerea prietenilor mei de la <strong><a href="https://vegis.ro/" target="_blank" rel="noreferrer noopener">Vegis.ro</a></strong>, am aruncat o privire pe site si am dat peste <a href="https://vegis.ro/alimentare-dulciuri-indulcitori/rapunzel/25793-crema-de-alune-nougat-vegana-ecologica-bio-250g/" target="_blank" rel="noreferrer noopener"><strong>Crema de Alune Nougat de la Rapunzel</strong></a>. Tare uimita am fost cand am gustat-o, pentru ca, obisnuita cu cremele de ciocolata din magazine, nu imi faceam mari sperante. </p>

<p class="wp-block-paragraph"><strong>Nu iti poti inchipui cat de buna este aceasta crema! </strong>Pe langa faptul ca are o textura foarte fina si cremoasa, fiind usor de intins pe placintelele pe care le pregatim, este foarte, foarte aromata. Se simte din plin aroma alunelor de padure (pe care le gasim intr-un procent destul de mare, de 33%), care impreuna cu ciocolata, formeaza deliciul suprem. Nu credeam ca o crema tartinabila ma poate cuceri in asa mod!</p>



<p class="wp-block-paragraph">Bine, mai are ea si alte avantaje: este <strong>bio</strong>,<strong> nu e asa de dulce</strong> precum alte creme populare, pe care le gasim in toate magazinele. In plus, este <strong>vegana</strong>, deci va puteti bucura de ea si in perioadele de post sau daca adoptati aceasta dieta. Am comparat putin si ingredientele si valorile nutritionale dintre ea si alte creme din comert, lucru ce confirma calitatea cremei Rapunzel. Mi-au atras atentia cateva lucruri: </p>



<ul class="wp-block-list">
<li>Daca alte creme de comert au un procent de maximum<strong> 13% alune de padure</strong> (chiar 3% in cazul unora), in crema Rapunzel avem <strong>33%</strong> <strong>alune de padure</strong>.</li>



<li>Crema Rapunzel contine <strong>zahar de trestie</strong>, care e putin mai sanatos decat cel alb, rafinat, intalnit in restul cremelor.</li>



<li>Alte creme contin <strong>vanilina</strong>, compus aromatic sintetic, pe cand crema Rapunzel contine <strong>vanilie bourbon</strong>.</li>



<li>Valoarea nutritionala per 100 g a <strong>glucidelor </strong>este in jur de 55-57 g, in timp ce la crema Rapunzel este de 35 g, cu 34 g zaharuri. Sigur, toate sunt dulci si nu sunt recomandate in cantitati mari. </li>



<li>Avand si un continut mai mare de alune de padure, crema Rapunzel contine si mai multe <strong>proteine </strong>(8.9 g), in comparatie cu alte creme care au o valoare maxima de aproximativ 6 g. Restul valorilor sunt asemanatoare. </li>
</ul>



<p class="wp-block-paragraph">Ei bine, ai dovada calitatii ridicate, ai parerea si recomandarile mele, nu ramane decat sa o incerci si tu, garantez ca iti va placea. </p>

<h2 class="wp-block-heading">Aluat fraged pentru placintele cu ciocolata</h2>



<p class="wp-block-paragraph">Nu doar umplutura e importanta, dar si &#8222;invelisul&#8221; placintelelor. In ceea ce priveste <strong>aluatul</strong>, am un sfat pentru tine: toate ingredientele, cu exceptia apei, pot fi amestecate intr-un blender. Ingredientele se combina mai usor, untul se incorporeaza uniform si vei obtine un amestec omogen. Apoi, adauga doar apa si formeaza un disc de aluat. Evita sa framanti prea mult, deoarece acest lucru ar putea activa glutenul, ceea ce ar afecta textura frageda a placintelor tale.</p>



<p class="wp-block-paragraph">De asemenea, poti ajusta cantitatea de zahar din aluat dupa propriul plac. Eu nu am vrut sa fie foarte dulci. </p>

<p class="wp-block-paragraph">Placintelele pot fi facute in avans si servite la temperatura camerei sau incalzite la cuptor. Desigur, cel mai bine e sa le servesti in ziua in care le-ai copt, cat sunt inca foarte proaspete. Totusi, poti sa le pastrezi intr-un recipient la temperatura camerei pentru<strong>&nbsp;2-3 zile</strong>. Daca intentionezi sa le pastrezi mai mult (pana la 5 zile), pastreaza-le la frigider.</p>

<p class="wp-block-paragraph">Cine spune ca trebuie sa astepti pana la Craciun sau pana la Paste pentru a manca un cozonac delicios? Teoria mea referitoare la consumul de babka e asa: Craciunul e iarna, Pastele e primavara, deci doua sezoane le avem asigurate. Vara-i prea cald pentru a da drumul la cuptor&#8230; dar cu toamna ce facem? Nu merita si ea un cozonacel pe masura? Aceasta <strong>babka umpluta cu ciocolata si alune de padure</strong> este perfecta pentru toamna, deoarece are in compozitia aluatului si <strong>dovleac</strong>. Si bineinteles, nu-i lipsesc nici <strong>mirodeniile de sezon</strong>, precum scortisoara si <a href="https://madelicii.ro/reteta/condimente-pumpkin-spice-pentru-cafea-si-prajituri/" target="_blank" rel="noreferrer noopener">amestecul de condimente pumpkin spice</a>. Si pentru un plus de aroma, dar si o textura mai umeda, scaldam babka intr-un sirop cu aroma tomnatica, pe baza de <strong>sirop de artar</strong>. </p>

<h2 class="wp-block-heading">Ce este babka?</h2>



<p class="wp-block-paragraph">Babka este o paine traditionala evreiasca, originara din <strong>Polonia </strong>si <strong>Ucraina</strong>.&nbsp;Este&nbsp;facuta dintr-un aluat&nbsp;moale, ca de cozonac (<em>brioche</em>), ce contine printre altele, drojdie, unt si oua. Dupa ce aluatul este umplut, se rasuceste asemenea <a href="https://madelicii.ro/reteta/rulouri-cu-scortisoara-banane-si-nuci-cinnamon-rolls/" target="_blank" rel="noreferrer noopener">rulourilor cu scortisoara</a>, apoi se despica si se impleteste. </p>



<p class="wp-block-paragraph">Totusi, in mod traditional,&nbsp;babka are forma rotunda (ca un guguluf sau ca un panettone), nu contine umplutura, ci doar o glazura cat mai festiva. Italienii, in schimb, preluand reteta si numind-o&nbsp;<em>treccia russa</em>&nbsp;(=impletitura ruseasca), i-au dat forma specifica de cozonac impletit si au adaugat umplutura cu alune de padure, ciocolata sau scortisoara.</p>

<h2 class="wp-block-heading">Ce contine aceasta babka cu ciocolata si dovleac?</h2>

<p class="wp-block-paragraph">In primul rand, ingredientul cheie pentru aluat este drojdia. Vom pregati initial o maia pentru a avea o babka cat mai pufoasa. Piureul de dovleac contribuie atat la textura umeda, cat si la culoarea superba a cozonacului. Daca nu esti totusi fan retete cu dovleac, sunt sanse mari ca aceasta babka sa fie totusi pe gustul tau, deoarece gustul este extrem de subtil. In schimb, aroma condimentelor este sesizabila. Scortisoara e obligatorie, iar eu am mai adaugat si amestec de condimente pentru placinta cu dovleac (<a href="https://madelicii.ro/reteta/condimente-pumpkin-spice-pentru-cafea-si-prajituri/" target="_blank" rel="noreferrer noopener">reteta e blog</a>). Daca nu vrei sa prepari acest amestec, adauga in aluat nucsoara, ienibahar si/sau ghimbir.</p>



<p class="wp-block-paragraph">Pentru a face<strong> piureul de dovleac</strong>, eu pun la cuptor timp de 1 ora dovleac placintar, apoi il dau prin blender. Fac asta la inceputul toamnei si il pun la congelator, avand astfel piure de dovleac la indemana oricand am nevoie. </p>

<p class="wp-block-paragraph">Nu stiu tie, dar mie imi place ca un cozonac sa fie plin de umplutura. Si asa e si aceasta babka, cred ca raportul dintre aluat si umplutura este foarte echilibrat. Umplutura se face usor si rapid, amestecand untul topit cu zahar, ciocolata (neagra sau cu lapte), cacao si alune de padure tocate. </p>

<p class="wp-block-paragraph">Pentru o textura si mai umeda, dupa ce am scos babka din cuptor, o vom insiropa cu un sirop delicios, cu aroma de toamna. Pentru ca siropul de artar este totusi o consistenta destul de vascoasa, il vom amesteca cu putina apa si zahar, dand in clocot. Optional, poti adauga si alcool, precum whiskey sau coniac. </p>

<h2 class="wp-block-heading">Aluat cu crestere lenta</h2>



<p class="wp-block-paragraph">Reteta de cozonac babka cu ciocolata si dovleac este destul de simpla, dar necesita putina rabdare pentru a lasa aluatul sa creasca frumos. Avand ingrediente grase (oua, unt), dar si piure de dovleac, trebuie sa dam suficient timp aluatului sa creasca, astfel incat sa obtinem o textura frumoasa dupa coacere. Dupa ce l-ai framantat, acopera bolul cu folie alimentara si un prosop cald si da-l la frigider <strong>pentru 4-6 ore sau chiar peste noapte</strong>. Nu numai ca aceasta crestere lenta permite aluatului sa dezvolte aroma, dar face si mai usoara intinderea si modelarea lui. </p>



<p class="wp-block-paragraph">In ceea ce priveste coacerea, culoarea poate fi destul de inselatoare. Eu am lasat la cuptor <strong>30 de minute</strong>, dar cel mai sigur e sa verifici temperatura din interiorul cozonacului cu ajutorul unui <a href="https://www.frigotehnie.ro/termometre/883-termometru-digital-wt1-2010000016657.html?search_query=termometru&amp;results=30" target="_blank" rel="noreferrer noopener">termometru special</a>. Acesta trebuie sa indice <strong>85°C</strong>. </p>

<h2 class="wp-block-heading">Cum pastram babka cu ciocolata si dovleac?</h2>



<p class="wp-block-paragraph">Siropul ajuta babka sa ramana proaspata putin mai mult decat alte tipuri de paine. Ideal este sa o consumi in <strong>4 zile</strong>. Pentru a nu se usca, e bine sa o pastrezi intr-un <strong>recipient inchis ermetic, la temperatura camerei</strong>.  </p>



<p class="wp-block-paragraph">De asemenea, babka poate fi si congelata. Dupa ce se raceste complet, infasoara cozonacul in folie alimentara si pune-l intr-o punga cu zip sau in folie de staniol. Poate fi pastrat in congelator pana la <strong>2-3 luni</strong>. Lasa la dezghetat la temperatura camerei cu cateva ore inainte de servire. </p>



<p class="wp-block-paragraph">Daca vrei sa o servesti calda, pune babka la cuptor la 90°C timp de 10 minute. </p>

<p class="wp-block-paragraph">Astazi servim desertul in stil frantuzesc! Aceste madlene cu ciocolata sunt un rasfat dulce ce acompaniaza de minune cafeaua, ceaiul sau ciocolata calda. Cu aroma puternica de <strong>cafea</strong> si <strong>alune de padure</strong> si acoperite de un strat generos de <strong>ciocolata neagra</strong>, sunt un deliciu care te vor face sa vezi <em>la vie en rose</em>. </p>



<p class="wp-block-paragraph">Madeleinele mele sunt insotitorul perfect unei cesti de cafea, intr-o dimineata relaxata de weeked. Sunt fragede si moi, iar aroma profunda de cafea iti va ridica, cu siguranta, starea de spirit. Glazura de ciocolata neagra presarata cu alune de padure si cafea macinata adauga o nota draguta si dulce prajiturilor, facandu-le si mai frumoase, si mai delicioase. In plus, adauga si o noua textura crocanta, care contrasteaza frumos cu madlenele fragede. </p>

<h2 class="wp-block-heading">Ce sunt madlenele?</h2>



<p class="wp-block-paragraph"><strong>Madeleine</strong> sau <strong>petite madeleine</strong> este o prajitura traditionala din nord-estul Frantei. Aluatul asemanator pandispanului (<em>genoise</em>) este copt in forme speciale, obtinandu-se prajituri mici, in forma de scoica. Acestea pot fi apoi glazurate sau pot fi servite simple. </p>



<p class="wp-block-paragraph">Nu este foarte clar cine a inventat aceste mici prajituri, existand mai multe legende in jurul anumitor <strong>personaje feminine pe nume Madeleine</strong> care ar fi creat aceste delicii, undeva prin secolul al XVIII-lea. Unele povesti spun ca ar fi vorba de Madeleine Paulmier, bucatareasa lui&nbsp;Stanislaus I&nbsp;, duce de Lorena si rege exilat al Poloniei. Altele leaga madlenele de un pelerin pe nume Madeleine care a adus reteta din calatoria ei in Compostela, Spania, sau spun ca o bucatareasa pe nume Madeleine a oferit prajituri mici in forma unei scoici pelerinilor care trec prin Lorena.</p>



<p class="wp-block-paragraph">Alte povestiri nu dau deloc prajiturii o origine loreniana si atribuie inventia patiserului&nbsp;Jean Avice, care a lucrat in bucatariile&nbsp;printului Talleyrand.&nbsp;Se spune ca Avice a inventat Madeleines in secolul al XIX-lea, facand prajituri mici in forme de&nbsp;aspic. </p>



<h2 class="wp-block-heading">Madlenele, simbol al memoriei</h2>

<p class="wp-block-paragraph">Una dintre cele mai cunoscute referinte literare, madlena devine un simbol pentru <strong>rolului memoriei involuntare</strong> in romanul <strong>&#8222;In cautarea timpului pierdut&#8221;</strong> scris de <strong>Marcel Proust</strong>. </p>



<p class="wp-block-paragraph">Personajul principal primeste de la mama sa un ceai si cateva madlene. Odata ce gusta din acestea, este transportat in alt timp, se trezesc amintiri care erau, pana atunci, bine ascunse in cotloanele mintii sale. Are sentimentul ca a mai trait senzatia respectiva, retraieste starile de atunci, amintindu-si chiar imprejurarile si ambianta. Este vorba de duminicile din copilaria petrecuta la Combray, cand, dimineata, inainte de a merge la biserica, intra in camera unei matusi bolnave, care inmuia o madlena in ceaiul de pe noptiera si ii dadea sa guste, asemenea unei impartasanii. </p>

<h2 class="wp-block-heading">Secrete in pregatirea madlenelor </h2>



<h3 class="wp-block-heading">Tava pentru madlene</h3>



<p class="wp-block-paragraph">Pentru a pregati aceste mici prajiturele, vei avea nevoie de o<strong><a href="https://www.auchan.ro/store/Forma-din-silicon-pentru-madeleine-Actuel%2C-36-x-17cm/p/031773" target="_blank" rel="noreferrer noopener"> tava speciala</a> </strong>pentru madlene. Aceasta poate fi de silicon sau din inox/otel. Probabil vei pune la cuptor mai multe &#8222;transe&#8221; de madlene, in functie de numarul de cavitati ale tavii. Eu am o tava din silicon cu 12 cavitati, pe care le-am umplut de trei ori. Imediat ce sunt gata prajiturile, rastoarna tava pe un grilaj de racire si apoi umple din nou formele si pune la cuptor. Manevreaza tava cu atentie si cu manusi de bucatarie. </p>



<p class="wp-block-paragraph">Tava o vom folosi atat pentru a coace madlenele, cat si pentru a le glazura cu ciocolata. </p>



<h3 class="wp-block-heading">Madlene cu aroma de cafea</h3>



<p class="wp-block-paragraph">Pentru aroma de cafea, iti recomand sa folosesti <strong>pudra de cafea instant</strong>, din aceea la plic. Va oferi o aroma mult mai puternica in comparatie cu espresso-ul lichid, de exemplu. Daca folosesti cafea gata preparata, aceasta va adauga prea mult lichid aluatului, schimband textura, iar aroma va fi prea discreta. Cred ca poti folosi si cafea macinata, dar zdrobeste-o putin cu o lingura pentru a obtine o pudra cat mai fina. De asemenea, eu am pus si o lingurita de <a href="https://cloudninefactory.com/produsele-noastre/extract-pur-de-cafea/" target="_blank" rel="noreferrer noopener">extract de cafea</a>, pentru a potenta si mai mult aroma. </p>



<h3 class="wp-block-heading">Madlene cu ciocolata&#8230; sau fara</h3>



<p class="wp-block-paragraph">Glazura de ciocolata este strict alegerea ta, la fel si modul in care le glazurezi. Ai doua variante: </p>



<ul class="wp-block-list"><li>pui putina ciocolata topita in mijlocul cavitatilor din tava speciala, peste care asezi madlenele si dai la frigider cateva minute</li><li>inmoi doar o parte a madlenelor in ciocolata topita pentru a crea un fel de model</li></ul>



<p class="wp-block-paragraph">Ciocolata neagra va contribui la sublinierea notelor de cafea si va adauga o textura crocanta. In plus, vor arata si mai frumos. Cred ca aceasta combinatie este pur si simplu irezistibila, dar madlenele sunt la fel de incantatoare si simple, fara ganache-ul de ciocolata deasupra. </p>



<p class="wp-block-paragraph">De asemenea, optional, poti presara peste ciocolata alune de padure si cafea macinata. Extra sfat: acest pas trebuie sa il faci imediat dupa ce ai inmuiat madeleines in ciocolata. Glazura se va intari destul de repede si nu va mai &#8222;prinde&#8221; alunele si cafeaua. </p>

<h2 class="wp-block-heading">Cum se pastreaza madlenele?</h2>



<p class="wp-block-paragraph">Ideal ar fi sa pastrezi madeleines intr-un<strong> recipient de sticla inchis ermetic</strong>. Este mai bun decat unul din plastic, deoarece cel din urma tinde sa inmoaie produsele de patiserie. Asaza o bucata de prosop de hartie pe fundul cutiei pentru a absorbi grasimea in exces, apoi pune cateva cuburi de zahar pentru a absorbi umezeala. Pune prajiturile racite bine si pastreaza la temperatura camerei <strong>pana la 4 zile</strong>.</p>



<p class="wp-block-paragraph">Madlenele pot fi si <strong>congelate</strong>, dar necesita un proces mai special. Le intindem pe o foaie de copt si le dam la congelator pentru aprox. o ora. Apoi le scoatem, le impachetam individual in folie alimentara si le punem intr-un recipient sau o punga. Pot sta la congelator pana la trei luni. </p>

<p class="wp-block-paragraph">Esti genul acela de persoana care ar manca Nutella la orice ora din zi si din noapte, direct din borcan, cu lingura (<em>eu ma declar vinovata</em><img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f92d.png" alt="🤭" class="wp-smiley" style="height: 1em; max-height: 1em;" />)? Atunci sigur te vei indragosti iremediabil de acest tort. Iti garantez ca e fix pentru tine, ca un vis devenit realitate pentru iubitorii de ciocolata!</p>



<p class="wp-block-paragraph">Si cum sa nu fie minunat? <strong>Blaturi pufoase si umede</strong>, <strong>crema fina de branza cu Nutella</strong>, cateva <strong>bomboane Ferrero Rocher</strong> pentru o textura crunchy, toate imbracate intr-o <strong>glazura </strong>delicioasa pe baza de <strong>mascarpone</strong> dar evident, cu pudra de cacao. Sa mai zic si de ganache-ul de ciocolata de deasupra? Nu doar ca adauga un extra-element de decor, dar si un plus de aroma.</p>

<h2 class="wp-block-heading">Blaturi fragede si pline de aroma  </h2>



<p class="wp-block-paragraph">Pentru blaturi am folosit trei tavi de 17 cm pentru a obtine un tortulet micut si inalt. Vei observa in reteta de tort cu Nutella si ciocolata ca blatul contine <strong>cafea</strong>. Chiar daca nu esti fan, stai fara grija, nu vei simti gustul ei. Principalul sau rol este a de a potenta, de a imbogati aroma de cacao. Daca nu esti totusi convins/a, o poti inlocui cu apa fierbinte. Cam cu jumatate de ora inainte sa te apuci de treaba, nu uita sa scoti untul din frigider. Pastreaza-l la temperatura camerei pentru a fi mai usor de batut cu zaharul. In rest, blatul se face foarte usor si rapid. </p>



<h2 class="wp-block-heading">Crème de la crème</h2>



<p class="wp-block-paragraph"><strong>Crema cu Nutella</strong> este absolut senzationala si extrem de simplu de facut. E asa de fina si catifelata, cu un extra de cacao pentru o extra aroma. Este foarte potrivita si pentru o tarta fara coacere cu Nutella, pentru a umple cupcakes-urile, dar eu am ales sa o folosesc de data aceasta pentru tort. </p>



<p class="wp-block-paragraph">Mi s-a parut totusi prea cremoasa pentru a inveli intreg tortul, asa ca am facut separat o <strong>glazura cu mascarpone</strong>. Prefer aceasta varianta in detrimentul cremei de unt pentru este muuult mai buna la gust, e mai light, mai fresh si are si o consistenta potrivita. Pentru imbracat avem nevoie de o crema mai solida, crema de unt fiind perfecta, insa odata ce se intareste, nu pot sa spun ca este chiar printre favoritele mele. Mi se pare un pic prea grea.  </p>



<p class="wp-block-paragraph">Eu am inserat si cateva <strong>bomboane Ferrero Rocher</strong> intre straturi si pentru decor. Pe cele din interiorul tortului le-am maruntit putin si le-am asezat deasupra cremei. Merg foarte bine doarece este tot o combinatie de ciocolata si alune de padure, ingredientele de baza si din Nutella. </p>

<h2 class="wp-block-heading">Cum pastram tortul cu Nutella?</h2>



<p class="wp-block-paragraph">La frigider, de preferabil intr-un suport de tort cu capac. Consumam in maximum 3-4 zile. </p>

<p class="wp-block-paragraph">Iata, asadar: o prajitura cu Nutella si ciocolata demna de sarbatoare, perfecta pentru o zi de nastere sau de ce nu, doar o zi obisnuita din timpul saptamanii. <strong>It&#8217;s always someone&#8217;s birthday somewhere</strong>. Apropo, eu am facut acest tort pentru ziua sotului meu, un ciocolatos convins. Initial a vrut cheesecake cu Nutella, dar l-am convins eu sa ii fac ceva mai festiv si sincer, nu cred ca i-a parut deloc rau. Tortul a fost devorat (bine, a avut ajutor si din partea mea si a catorva musafiri). </p>

<p class="wp-block-paragraph">Este acel moment al anului cand se suflecam manecile, ne punem sortuletul de bucatarie si ne pregatim sa umplem bucataria si casa cu aroma deliciilor de Craciun. Si nu exista mod mai bun pentru a incepe decat cu o reteta de fursecuri traditionale: stelute cu scortisoara. <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/2b50.png" alt="⭐" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/17.0.2/72x72/2b50.png" alt="⭐" class="wp-smiley" style="height: 1em; max-height: 1em;" /><img src="https://s.w.org/images/core/emoji/17.0.2/72x72/2b50.png" alt="⭐" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p class="wp-block-paragraph">Pana si Mos Craciun se asteapta sa gaseasca o prajiturica si un pahar de lapte in schimbul cadourilor. Asa ca, daca esti in cautarea unei retete de fursecuri de Craciun, iti propun sa incerci minunatele <strong>stelute cu scortisoara, alune de padure si migdale</strong>. Aceste fursecuri condimentate sunt o<strong> </strong>combinatie delicioasa&nbsp;intre un macaron si o bezea si seamana oarecum cu pricomigdalele.&nbsp;Cu aroma lor de alune de padure si textura <em>chewy</em>, moale la interior, stelutele nu trebuie sa lipseasca de pe platoul cu prajituri la masa de Sarbatori.</p>

<h2 class="wp-block-heading">Asa are gust Craciunul in Germania</h2>



<p class="wp-block-paragraph">Stelutele sunt inspirate din reteta de <strong>Zimtsterne</strong>, prajituri clasice germane de Craciun facute din nuci macinate. Sunt foarte populare in intreaga Europa, in special in Austria, Alsacia sau Elvetia. Mai poarta numele de <strong>Erstesternen</strong>&nbsp;(<em>Primele stele</em>) si sunt consumate de evreii germani ca parte a primei mese dupa postul Yom Kippur.</p>



<p class="wp-block-paragraph">Compozitia se face foarte usor, insa decuparea formelor necesita un pic de munca si rabdare, dar merita! </p>



<p class="wp-block-paragraph">In mod traditional,  <strong>Zimtsterne</strong> sunt facute doar cu migdale, dar poti folosi orice fel de nuci sau diferite combinatii. Ai grija insa, <strong>faina de migdale</strong> nu va functiona bine, fiind extrem de fina in comparatie cu <strong>migdalele macinate</strong>.&nbsp;Utilizarea fainii de migdale va face aluatul mai greu de lucrat si nu va oferi acea textura speciala. </p>



<p class="wp-block-paragraph">Un aspect important in cazul acestora este <strong>timpul de coacere</strong>. Eu le-am lasat in cuptor aproximativ 12 minute, iti recomand sa le lasi maximum 15 minute, nu mai mult, pentru ca s-ar putea sa fie prea coapte. Aceste fursecuri&nbsp;nu isi vor schimba culoarea in timpul coacerii, deci nu iti poti da seama daca sunt facute dupa acest criteriu. Glazura de bezea se va intari la cuptor, dar trebuie sa ramana alba. Cand sunt scoase din cuptor, fursecurile&nbsp;<strong>ar trebui sa fie inca moi si sa arate usor umede pe partea din spate.&nbsp;</strong>Se vor mai intari in timp ce se racesc, iar cu timpul devin si mai moi.  </p>

<h2 class="wp-block-heading">Pentru cat timp sunt bune fursecurile</h2>



<p class="wp-block-paragraph">Partea cea mai faina la aceste prajituri ca devin mai bune cu timpul! Rezista pana la 3 saptamani, deci le poti face fara grija cu mult inainte de Craciun. Pastreaza-le intr-un recipient inchis, de preferabil o cutie metalica. </p>
